Previous rejections of pine nuts at the European border were often related to pine mouth syndrome, which is characterized by an unpleasant taste in the mouth after consuming pine nuts. Because of this, they are attractive to growers and are often harvested without the strict control of forestry experts.
In practice, many European importers require that the storage life of sprockets at the time of their arrival in the warehouse should not exceed one third of the total storage life period. There has been concern about whether pine grains should undergo a new dietary assessment, especially since the Asian varieties used are different from European ones. Today, the United States has embarked on managing all forests to improve pine nut production. In response to the increased incidence of pine mouth cases, the Chinese authorities have implemented measures to accredit pine nut exporters and ensure that pine nuts from Pinus armandii are no longer exported to the European Union.
The calculation of margins according to the final retail prices of pine nuts is not indicative, since the entire sector has variable product prices depending on the region and the harvest season. So even Grimo, a woman who has access to a nursery full of walnut trees, doesn't cook with pine nuts as often as she would like because of the price.
